Cinnamon Granola
100 grams Jumbo Oats
50 grams desiccated coconut
50 grams flaked almonds
1/2 teaspoon vanilla paste
100 grams broken cashews
1 teaspoon of ground ceylon cinnamon
1/4 cup of melted extra virgin coconut oil
1/4 local honey or good quality maple syrup
cup & half of – sesame seeds, sunflower seeds, pistachio or goji berries – or any other nut or seed you prefer.
Preheat the oven to 180C
In a pan on low heat melt the coconut oil and honey or maple syrup.
Add all the ingredients and mix well, ensure that all ingredients are coated thoroughly
On a baking tray with parchment paper- spread all the ingredients out make sure that it’s evenly spread.
Cook for about 10-15 minutes, give it a mix halfway through. The mixture should be golden brown.
Let it cool and then you can store it in a glass container
